Beer Bread

Makes 4 Servings
Hands-On Time: 10 Minutes
Total Preparation Time: 30 to 35 Minutes

​

  • 8 tablespoons (1 stick) unsalted butter

  • 3 cups unbleached all-purpose flour

  • 3 tablespoons sugar

  • 1 tablespoon baking powder

  • 1 teaspoon table salt

  • One 12-ounce bottle good-quality beer

​

1. Place an oven rack in the upper third of the oven and preheat the oven to 350°F. Place the butter in a 13x9x2-inch baking dish or pan and set it in the oven while the oven is preheating.

​

2. Stir together the flour, sugar, baking powder, and salt in a medium bowl. Stir in the beer until it is just incorporated. (The dough will be sticky and heavy.)

​

3. Pour 6 tablespoons melted butter out of the pan into a cup; tilt the pan to coat the bottom and sides with the remaining butter. Spoon the bread dough into the pan and spread evenly; drizzle the 6 tablespoons melted butter over the top. Bake for 20 to 25 minutes, or until the bumpy top is golden brown.

4. Remove the bread from the oven to a cooling rack; cut the bread into rectangles and serve warm.

20 / 20 Vegetable Seasoning


Makes 4-6 Servings
Hands-On Time: 5 Minutes
Total Preparation Time: 20 to 25 Minutes

  • 4-6 servings of fresh vegetables (or frozen vegetables thawed)

  • 1 tsp table salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 4 tbsp olive oil

​

1. Wash and place vegetables in a large mixing bowl and set aside.

​

2. In a separate bowl, mix in the olive oil, salt, pepper, garlic, onion and paprika.  Stir fully until combined.

​

3. Pour olive oil mixture over the vegetables into the bowl and mix well until all vegetables are covered. Place on 9x12 plan.

​

4. Place into an oven at 425°F to roast for 20-25 minutes depending on your oven.  Vegetables will reduce in size.  Remove when done and let sit for 2-3 minutes before serving.

Thai Peanut Sauce from Scratch


Makes 2 Servings
Hands-On Time: 5 Minutes
Total Preparation Time: 5 Minutes

​

  • 1/2 cup peanut butter (smooth)

  • 3 tbsp soy sauce (or aminos)

  • 1 tbsp rice vinegar

  • 1 tsp garlic powder

  • 1 tsp ginger powder

  • 2 tsp brown sugar

  • 1 tsp chili garlic sauce (or Sriracha, or Frank's Red Hot)

  • 3-4 tbsp warm water

​

1. Except water, combine ingredients into a large bowl.  Whisk together until well-combined.

2. Slowly add one tbsp of water at a time (and whisk together) until desired consistency is reached.

3.  Feel free to add more or less heat to bring to desired temperature, just remember you can't remove the heat once it is added!

4.  Add to your choice of noodles or vegetables.

Stir-Fry Sauce from Scratch


Makes 1.5 Cups
Hands-On Time: 5 Minutes
Total Preparation Time: 5 Minutes

​

  • 1.5 tablespoons cornstarch

  • 1⁄8 cup brown sugar

  • 1⁄8 teaspoon ground or powdered ginger

  • 1 tablespoon of garlic, minced

  • 1⁄4 cup soy sauce 

  • 1⁄8 cup rice vinegar (or apple cider vinegar)

  • 1⁄8 cup of buffalo suace (depending on how spicy you like it)

  • 1 cup water (feel free to vary this amount depending on how you like it).

​​

1.  Combine all incredients in a bowl and whisk together.  Can keep in the refrigerator for up to two weeks.

​

Quick Granola @ home


Makes 4-6 Servings
Hands-On Time: 10 minutes
Total Preparation Time: 55 Minutes

​

  • 3 cups of old fashioned rolled oats

  • 1.5 sticks of butter

  • 1/2 cup of honey

  • 1 - 1.5 cup of chopped nuts (almonds, pecans, etc) depending on taste

  • 1 tbsp vanilla

  • 1 tbsp nutmeg

  • 1 tbsp cinnamon

  • 1 tsp kosher salt

​

1. Pre-heat over to 275°F.

2. Combine oats, vanilla, nuts, spices and salt into a large bowl and combine.  Set aside. 

3. Melt butter in separate small bowl and add in honey.  Stir until honey and butter are combined evenly.

4. Pour butter/honey mixture into bowl of dry ingredients and mix until all combined.

5. Spoon out mixture on to 9x12 baking sheet.

6. Place in over for 40-45 minutes and carefully monitor to avoid edges crisping.

7. Remove and let cool.  Once cooled, break granola into smaller pieces and store in container of choice.

​

I have found that adding anything other than nuts into this can be delicious but should be done after the baking process.  Dried fruits and chocolate chips are a good example.  Doubling this recipe for a larger batch is easily done.  Baking for longer on a lower temperature is recommended to avoid crisping the edges too much.

Fresh Bagels w Greek Yogurt


Makes 8 Servings
Hands-On Time: 10 Minutes
Total Preparation Time: 35 Minutes

​

  • 2 cup nonfat organic plain Greek yogurt

  • 2 cup all purpose flour

  • 3 tsp baking powder

  • 1 tsp table salt

  • 2 egg whisked (for egg wash)

  • Bagel flavoring of choice (poppy seeds, garlic, everything seasoning, etc)

​

  1. Preheat oven to 350°F. 

  2. On a large 9x12" baking sheet, place a silicone baking mat.

  3. In a stand mixer (or large mixing bowl), combine Greek yogurt and the flour, baking powder and salt. 

  4. Mix for approximately 3-5 minutes or until a moderately wet ball forms in your mixer.  

  5. If too wet, feel free to add a dusting of flour or if too dry, a small dash of water can even it out.  

  6. Roll out dough in a long rope shape making sure it does not stick to the rolling surface.  Divide the rope into eight (8) equal pieces, roll out each and form a closed ring shape by combining the open ends of the rope.

  7. Once the bagels are on to 9x12" pane, gently coat tops with egg wash and bagel seasonings of choice.

  8. Bake bagels for about 20-25 minutes and use a toothpick to ensure they are cooked all the way through.  Remove from oven and cool keeping in mind they may deflate a little once removed and cooled.  

  9. Serve with butter or cream cheese or eat plain!

Blueberry Bread


Makes 8-10 Servings

Total Preparation Time: 65 Minutes

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, at room temperature

  • 1/2 cup granulated sugar

  • 1/4 cup  packed light or dark brown sugar

  • 2 large eggs

  • 1/2 cup Greek yogurt

  • 1.5 teaspoons vanilla extract

  • 1/3 cup milk

  • 1.5 cups blueberries

​

1. Preheat the oven to 350°F and oil a 9×5-inch loaf pan with nonstick spray. Place it aside.

 

2. In a large bowl, combine flour, baking soda, baking powder, and salt together while stirring slowly to evenly blend ingredients.  Place it aside.

 

3. Using a stand mixer fitted with a paddle, cream the butter, white sugar, and brown sugar together on high speed until it becomes smooth.  This will take about two minutes. Reduce speed of mixer and slowly add in eggs one at a time until well combined.  Add in the Greek yogurt and vanilla extract to complete wet mixture.  Then, on medium speed add the dry ingredients and milk into the mixer.  Mix until combined and then finally add in the blueberries.

 

4.  Remove the batter from the mixing bowl and place it into the oiled baking pan. Bake for 50 minutes.  I have found that covering the pan with aluminum foil at around the 25 minute mark prevents the corners of the bread from burning.  This may depend on your oven and other factors.  

​

5.  Once removed, dust the top quickly with some white sugar (or powdered) to add a light glazing effect.  Let cool and then serve.
